Studio Food, Issue 1: The Gator-Bit TunaDilla

No session is complete without a good meal. Sometimes time constraints only allow for takeout or delivery–but other times a pause for a home-cooked meal with the band or group of collaborators can lead to some of the most memorable moments of a session.

Still other times, a good quick meal can be perfect for resting one’s ears during a long editing or mixing session. This afternoon is one of those times, and the result is today’s new variety of my famous quesadillas: the GATOR-BIT TUNADILLA! And for dessert, a refreshing BLUEBERRY PASSION FRUIT SMOOTHIE!

NOTE: All measurements are approximate, as I rarely measure anything.

GATOR-BIT TUNADILLA

1 flour torilla
2 oz. cheddar cheese
2 oz. white tuna
spicy brown mustard
GATOR BITE hot sauce!
(An amazing hot sauce I found at a store in New Orleans that is an entire hot sauce store! What a great place! Anyway, it’s strong, smoky and flavorful. If you don’t have it use whatever you have on hand!)

1. Spread liberal layer of spicy brown mustard over tortilla. Spread another liberal layer of hot sauce.

2. Add one layer of cheese, tuna, and another layer of cheese.

3. Cook on a skillet, covered, slowly at LOW HEAT until cheese is well melted and tuna evenly hot. Then, turn up to HIGH HEAT and let the outside get as crispy as desired.

4. Serve with your favorite sauces or sides.  Pictured above with sour cream, salsa, and Brianna’s Chipotle Cheddar dressing. (Wish I had some guac!) Best served with a cold beer or juice. Enjoy!

BLUEBERRY PASSION FRUIT SMOOTHIE
(makes 2 servings)

2 cups ice
1 cup frozen blueberries
1 banana
1 Chobani Passion Fruit Yogurt
1 cup apple juice

1. Put ice in blender and crush up real good-like.

2. Add other ingredients and blend.

3. Serve in a nice frosty glass. Ideally with a garnish of fresh mint or something.
